Spiced Nut Clusters


Nuts contain the essential fatty acids linoleic and linolenic acids, and the fats in nuts for the most part are unsaturated fats, including monounsaturated fats.

Many nuts are good sources of vitamins E and B2 (riboflavin, an antioxidant), and are rich in protein, folate, fiber, and essential minerals such as magnesium, phosphorus, potassium, copper, and selenium.

ingredients
1 large omega-3-enriched egg white
1 Tbsp honey
1 cup walnuts
½ cup raw pumpkin seeds (pepitas)
1/3 cup dried cranberries
1 tsp ground cinnamon
1 tsp ground ginger
¼ tsp ground cardamom

method
1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.

2. In a medium bowl, whisk the egg white and honey. Add the walnuts, pumpkin seeds, and cranberries. Sprinkle with the cinnamon, ginger, and cardamom and toss to coat well.

3. Drop by 1/8-cup measures on the prepared baking sheet. Bake for 18 to 20 minutes, or until browned.

4. Let stand on a rack for about 30 minutes, or until completely cooled.
