butter icing

i normally buy plain cakes or cupcakes (without the icing) cos they're cheaper. If I crave some sweetness, I just make my own icing... yummy!biggrin

ingredients
3 sticks of unsalted butter, softened
16 oz/1lb/453g icing sugar
1 tbsp milk
1 tbsp vanilla extract/essence
pinch of salt
method
put all ingredients in a bowl
beat until soft and fluffy
frost the cake/cupcakes as desired
if the mixture is too soft, keep in the refrigerator for 30mins before frosting again
